Impacts of Distillers Grains in Cheese Quality



A cheese producer complaining of unwanted gas formation ("late blowing") in cheese hypothesized the problem was caused by distillers grains. Results confirm milk contamination was an issue, not DDGS. A follow-up study than investigated reduced-fat DDGS versus full-fat for cheese production.
